	Rustica Panini . . . Ingredients: - (1) full size baguette - 3-4 oz. thinly sliced fontina cheese - 8 marinated sliced mushrooms - 4 slices of smoked turkey - 8 strips of marinated red peppers - Salt and pepper, olive oil Instructions: - Slice full size baguette width-wise and across in thirds, (to make three 8" long sandwiches) - Baste outside of bread with olive oil - Place all ingredients on bottom of bread slices - Salt and pepper to taste. - Cover with top half of bread and grill to taste - approximately 2 minutes
	Toscano . . . Ingredients: - 4 crusty round rolls - 2 tbls. lemon juice - 5 oz. softened goat cheese - 2 tbls. chopped cilantro - 1 finely chopped garlic clove - 2 roasted sliced red peppers - Salt and pepper, olive oil Instructions: - Slice rolls in half; baste outside of roll with olive oil - Place all ingredients on bottom of rolls - Salt and pepper to taste - Cover with top of roll and grill to taste - approximately 2 minutes
	Fortissimo . . . Ingredients: - 4 round or square flat focaccia bread - 4 large thin slices of prosciutto - 1/4 lb. sauteed fresh mushrooms - 6 pitted oil cured black olives - 4 oz. fresh sliced mozzarella cheese - 6 sliced marinated sliced artichokes - 1 sliced ripe tomato - Salt and pepper, olive oil, dried oregano Instructions: - Baste outside of bread with olive oil - Place all ingredients on bottom bread slices - Salt, pepper and oregano to taste - Cover with top bread slices and grill to taste - approximately 2 minutes
